Crusted salmon with spinach salad

My craving for salmon reached new heights this week. I have had some form of salmon everyday but this has been my favorite meal so far. It is super easy but taste absolutely amazing.

Salmon is nutrient dense. It is an excellent source of high-quality protein, vitamins and minerals (including potassium, selenium and vitamin B12) and the heart healthy omega-3 fatty acids.

Ingredients

4 ounces of baby spinach
4 skinless salmon fillet
Ground black and red pepper
Salt
2 tablespoons of olive oil
3 tablespoons mustard
2 tablespoons lemon juice
6 tablespoons of breadcrumbs
1 medium red onion,  thinly sliced tablespoons fresh lemon juice5 ounces baby spinach1/2 medium red onion, thinly sliced

Directions

Preheat the oven to 240 degrees. Line a baking tray with aluminum foil and set aside. In a bowl mix 1 tbspn olive oil, breadcrumbs, black and red pepper,  salt.

Place the salmon on the oven tray; season with pepper and salt. Spread the mustard on the fish, top with crumb mixture, pressing gentle to adhere. Roast salmon for 11-13 mins.

Mix spinach, onion, salt, pepper, lemon juice and remaining oil. Serve salmon with spinach.
