Tonight, I had a rather long but enjoyable conversation with my mom about cooking in general and the passion I have for it. During this conversation I was thinking of what I could cook under 30 minutes and seafood based.
A bit sad that I didn’t have a mixed seafood bag in the freezer as I would really have appreciated some calamari/squid in this dish. Anyways as with life we learn to adapt quickly which is what I did :).
For this meal I used macaroni, but orzo will be a perfect substitute. I will remake this meal using orzo (a rice shaped pasta) :). Pasta in all its various shapes, sizes, and textures, provides the perfect backdrop for your favorite combinations of seafood, sauces, and seasonings. It is a must in everyone’s food cupboard :).
The ingredients which include peas, cooked prawns, macaroni, chopped parsley, sliced red peppers, black pepper, salt, curry, all purpose seasoning and cumin are pictured below
Bring the macaroni to boil for about 7 mins add the spices and leave to cook for another 5 minutes. Heat oil in a frying pan and add prawns, peas, salt and pepper stir for 2 minutes. Add roasted pepper slices and some chopped parsley and stir for a minute. Add the macaroni and some stock left from cooking the pasta. Leave to cook for 2 mins
on low heat. Stir and serve, sprinkle the remaining chopped parsley on the dish.
