Hot fish soup

I am still on my salmon love galore and trust me it has been great experimenting recipes with salmon. As I seem to have caught the hayfever steez going around and ended up with a blocked nose :(, I thought I should prepare something spicy for dinner :).

Prep time: 15 mins
Cook time:15 mins
Serves: 4

Ingredients

900ml fish stock
1 teaspoon ginger and garlic paste
150g thin vermicelli
3 tablespoons fish sauce
1 sweet bite pepper, thinly sliced
250g fresh large prawns
250g salmon fillet, cut into cubes (alternative: mackerel)
3 spring onions, chopped
Handful coriander leaves

Directions

Pour in the stock and ginger and garlic paste into a saucepan, bring to boil, then simmer for 3 mins.

Bring water to boil in another saucepan. Put vermicelli in and leave to cook for a minute. Drain and keep warm.

Add fish sauce and sweet bite pepper to stock and simmer for 2 mins. Add prawns and salmon, cook for 5mins. Add spring onions and coriander leaves to taste.

Dish noodles to soup bowls. Pour soup after lifting out fish and prawns into bowls and serve.

    • Definitely….Mackerel and smoked haddock works really well in this dish. I am sure other options works as well…do try and share your experience šŸ™‚

    Brilliant!! I have vermicelli left in my cupboard which I have been wondering wHat to do with it ; as d first recipe was a disaster, don’t ask!! Lol
