Grilled chicken


Hi all….trust you are well….It has definitely been a while and I honestly have no idea why I’ve let so much of life’s crap get in the way but this is me taking a step against BS :).

Anyway I have decided to share my successful recipe of chicken grilling with you, as everyone keeps telling me my grilled chicken is always on point :). Key to its success is marinating ;). I personally hate the taste of boiled chicken as it tends to make me nauseous so I avoid it at all cost. This was why I started experimenting with grilling chicken fresh and it has definitely been worth it 🙂

Prep time: 9 hours (99% of the time is for marinating)
Cook time: 50 – 75mins (highly dependant on the type of chicken)
Serves: 10 – 14



4kg fresh chicken portions, thoroughly washed in running cold water
1 tablespoon black pepper
2 tablespoons red pepper
1.5 teaspoon salt
1 teaspoon dry thyme
2 tablespoons all purpose seasoning
2 tablespoons ginger and garlic paste
1 teaspoon cinnamon
1 freshly squeezed lemon juice or 3 tablespoon of bottled lemon juice
3 tablespoons olive oil



Put the chicken portions in a container and add all the above ingredients. Mix together by hand ensuring all portions are covered by the seasoning. Cover container with a lid or clingfilm and place in the fridge for 2 – 8 hours to marinate

Place the chicken portions on an oven tray and into a preheated grill at 200° or gas mark 5. Leave to grill for 50mins. Turing it over at 25mins so both sides are well cooked. You will know it is cooked by inserting a fork in the chicken. It should go in with ease and the juices should run clear. However, meat and juices nearest to the bone might still be a little pink even though the chicken is thoroughly cooked.

Serve with chopped chilli and parsley. It can be eaten with noodles, boiled potatoes and vegetables, pasta or fried rice.
