Today was definitely a lazy day 🙂 but I got up about 5 ish to cook. I saw chorizo in store the other day and got excited so bought loads to cook with paella rice. Oh well not ready for paella so pasta had to do :).

300g penne pasta
170g smoked chorizo
1 red and green chilli, thinly sliced
1 red onion, thinly sliced
1 teaspoon ginger and garlic paste
1 red and green pepper, chopped
80g feta cheese
1 carrot, grated
In a saucepan of boiling water add salt and penne and leave to cook for 10 minutes. Add gulp of oil, black pepper and chilli flakes and leave to cook for another 10 minutes on medium heat.
In a heated wok add oil then onions and chilli, stir for 30 seconds. Add chorizo and season with salt, black pepper, ginger and garlic paste. Leave to cook for 2 minutes then add peppers, cook on low heat for 5 minutes.
Add the boiled penne and stir, break feta cheese into the wok and stir in. Add carrots, stir and leave to simmer on low heat for 5 minutes then serve.
