This has definitely been a long time coming. So many times I have heard people rave on and on about pulled pork but never understood the hype.
About 2 weeks ago I tried it in a sandwich for the very first time and I was sold :). I decided to try my home made version – thank God the slow cooker finally has a function :).
Prep time: 15mins
Cook time: 6 – 8 hours
3 red and green chilli, chopped
3 red onions, thinly sliced
6 garlic cloves, crushed
400ml chicken stock
2 tablespoons brown sugar
1 tablespoon cumin
1 tablespoon spoon ginger paste
1 tablespoon olive oil
800 – 1000g boneless or bone in pork shoulder
5 sweet potato, peeled and cut into large chips
1 green, yellow and red pepper, sliced
Line the bottom of the slow cooker with chilli, 2/3 onions and garlic. Pour in chicken stock and keep.
Mix sugar, cumin, ginger paste, black pepper, salt, lemon juice and olive oil and rub into the pork shoulder. Place the pork shoulder into the slow cooker and cook until the pork is fork tender, either at high for 6 – 8 hours or low for 8 – 10 hours.
Turn off the slow cooker and remove the pork to a cutting board. If the pork has bone discard it. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat.
Meanwhile place the potatoes, peppers and remaining onions on an over tray. Sprinkle with black pepper and salt. Drizzle with some olive oil and place in a preheated oven at 220° for 15mins to cook. Serve along side thr pork once it is well roasted.
