This meal was inspired by a request from a special baybee of mine (you know yourself) ;). I do hope you enjoy it.  Anywayz wow!!!! Cowfoot takes forever to cook, it will definitely be a while before I attempt this meal again. For now I will say it was worth the effort :).


Prep time: 10mins
Cook time: 100mins
Serves: 4



4kg cowfoot, cut into edible chunks
2 Stock cubes
120ml Palm oil (trying to be healthy ;))
2 tablespoons of potash, mix with about 50ml water, sieve and set liquid aside
2 tablespoons crayfish
2 tablespoons dry red pepper
Bunch of Utazi leaves, thinly sliced
1 medium red onion, thinly sliced



Place the cowfoot in a large saucepan, add water and stock cubes and leave to cook till soft.

In another saucepan add palm oil and potash mix. Stir until it turns a yellow colour and starts to thicken. Add crayfish, salt and dry pepper whilst stiring continuously.

Add cooked cowfoot to sauce, stir and leave to simmer for 5mins on low heat.
Serve garnished with onions and utazi leaves.
