Hope you had a good day today…..my Monday was just hmmmmmmm…..I have no words….glad it is almost over but still very thankful :). The rain this evening on my way back from my appointment was just MEAN!!!!! I was very upset by it that I decided noodles tonight then bed. On getting home I opened the fridge door and I had a change of heart *blushes*.
Food definitely has a special hold on me :). I decided to mix beef steak with asparagus and peaches. Peaches because I very much doubted I would eat the fruit on its own. This was a very experimental meal tonight, but I’m very impressed with the outcome ;).

Cook time: 15mins
4×280g beef steak
1 teaspoon ginger and garlic paste
1 medium onion, finely chopped
2 cloves of garlic, finely chopped
3 ripe peaches, sliced
200ml chicken stock
1 tablespoon brown sugar
200g Asparagus tips
Season beef with salt and pepper, rub in the ginger and garlic paste, drizzle with olive oil and lemon juice. Place on a baking tray and put in a preheated oven at 200° for 12 minutes (6 minutes on each side).
Add 1 tablespoon olive oil in a heated pan then onions and garlic, stir for 30 seconds. Add peaches and stock and leave to cook for 2 minutes. Add sugar and stir in for a minute then add butter for 1/2 a minute or till when it melts.
