Beef curry with cumin rice

Happy sunday dahls!!

I woke up this morning craving fishpie which I decided to make. Recipe coming soon :). Whilst I was waiting for the pie filling to cool down, I got bored and decided to make something. This past week I have been thinking of making something with coconut milk in my fridge and this kinda worked out perfectly.

Prep time: 10mins
Cook time: 20mins 
Serves: 4

Ingredients

2 tablespoon sunflower oil
1 medium onion, thinly sliced
2 red chilli, thinly sliced
2 tablespoons ginger and garlic paste
600g beef, cut into small cubes
1 large potato, peeled and cut into small slices
2 tablespoons curry powder
400ml coconut milk
2 large tomatoes, thinly sliced
Bunch of baby spinach leaves, washed
1 tablespoon dry coriander
1 tablespoon dry chilli
Salt
1 tablespoon cumin
300g easy cook rice
Water

Method

Add oil to a heated sauce pan; add onions, chilli, ginger and garlic paste and stir for a minute. Add beef, stir and leave to cook for 4 minutes on low heat.

Add potato and curry powder, stir for a minute then add coconut milk, salt, dry coriander and dry chilli, cover and leave to simmer for 10 minutes to allow the potatoes cook.

Add tomatoes and spinach, leave on heat for another minute.

Meanwhile in a dry saucepan add the cumin and fry for 30 seconds. Add rice, water and salt. Leave to cook for 12 to 15 minutes.

Serve with curry sauce
