Beef couscous


Staple ingredients like couscous are a must have in my cupboard :). It originates in North Africa, consisting of many tiny granules made from semolina which is cooked by steaming. It is used as a base for meat or vegetable stew. Couscous has become a popular alternative to rice and pasta *happydance* because I absolutely love it :). It has a light fluffy texture which is a little bland in flavour but readily soaks up the flavours of other ingredients.


Couscous is also one of the easiest things to cook as it practically cooks itself.


Tonight was a couscous base night as Irokotv got me hooked on movies #blush. So far tonight I have watched 2 movies :), no wonder I didn’t want to spend so long in the kitchen *coverseyes*. Nevertheless this was a meal that was worth every minute spent in preparation ;).

Prep time: 5mins
Cook time: 15mins
Serves: 4


300g couscous
400g beef, sliced
500g frozen mixed vegetables
Olive oil
Lemon juice
Black pepper
1 tablespoon ginger and garlic paste



Pour couscous into a heatproof bowl.

Bring water to boil and pour over the couscous to cover it by about 1cm. Drizzle with olive oil and lemon juice. Season with salt and pepper.

Stir to mix the flavours through the couscous. Cover the bowl tightly with clingfilm and set aside for 10 minutes.

Meanwhile, add sliced beef in a heated oiled wok, season with salt and pepper and add ginger and garlic paste. Leave to cook for 5 minutes or till beef browns, stirring at intervals. Add mixed vegetables and leave to simmer for 3 minutes.

Add couscous to the wok stir in and leave to cook on low heat  for 2 minutes. Serve imediately 🙂
