Grilled haddock with roast potatoes

Hey dahls…hope you’ve had an amazing weekend so far because I have. Minus the 5mins rain this morning it has been a brilliant weekend :). To top it all up my friend brought it to my attention that yesterday was my last working Saturday for 6 weeks *happydance*.

Anyways, I want to apologise for this post coming in late I got carried away with the weather and forgot to upload yesterday :). For this meal I initially planned on grilling fish to eat with noodles but my favorite Mr Smith convinced me to use roast potatoes which was an amazing substitute. Thanks Mr Smith;).

Prep time: 15mins
Cook time: 20mins
Serves: 4

Ingredients

2 x 300g haddock fillet
8 sweet bite peppers, halved
4 red onions, cut into quarters
Handful of coriander, roughly chopped
Salt
Black pepper
Red chilli flakes
Olive oil
Lemon juice
4 garlic cloves
Paprika
600g baby potatoes

Method

Heat the oven to 240 degrees and arrange a rack in the middle.

Place fillet on an aluminium foil lined oven tray. Season fish with pepper, salt and chilli flakes. Sprinkle coriander on top and surround with peppers, garlic and onions. Drizzle olive oil and lemon juice on fish and place in the oven to grill for 10 mins.

Meanwhile, wash and boil baby potatoes for 10mins. Drain in a colander, add paprika, salt, black pepper, drizzle with olive oil and toss all to mix seasoning with potatoes. Place potato on a baking tray and roast in oven for 10mins.

Remove from the heat and serve with the fish sprinkled with the remaining coriander
