Kedgeree

Yippee!!! Start of a new week :). Really excited about this new week not exactly sure why, but I am expecting it be a blessed one :). Work hopefully should be worth it :). Today I’m enjoying the last day of my weekend, in bed and watching the Tyler Perry movie collection :). I made kedgeree for lunch, really proud because it’s something I’ve thought about for so long :).

Cook time: 25mins
Serve: 4

Ingredients

300g smoked haddock fillet
4 bay leaves
300 ml milk
3 tablespoons vegetable oil
2 teaspoons ginger and garlic paste
1 large onion, finely chopped
2 teaspoons curry
Salt
Black pepper
300g long grain/basmati rice, rinsed under cold water
Handful chopped parsley
Handful chopped coriander
4 eggs

Heat oil in a large pan, add the onions, ginger and garlic paste and gently fry for 3 minutes till its soft. Add the spices and stir for a minute. Add the rice and 600 ml of water. Leave to cook for 15 minutes.  Once cooked set aside and keep warm.

Boil eggs in water for 10 minutes. Run under cold water, peel and cut into quarters.

For the fish, place in a pan, pour in the milk and add the bay leaves, then leave to poach until the flesh flakes. Remove from the milk, peel away the skin, and flake the flesh into thumbsize pieces.

Mix the rice, coriander, fish, parsley and eggs together in the pan. Serve hot, sprinkled with a few extra herbs.
