Cod kebabs


I started the day with a tiny security hiccup *coverseyes *. I woke up at 2am to move from the couch to the bed and realised I had left my front door unlocked.

Let’s say I had a quick paranoia moment and had to go round all rooms to check no one else was in the flat apart from myself, only then was I able to go back to bed :). Lesson learnt never forget to lock the door and always check before bed!! Apart from this brief high blood pressure moment my day had been good :). I completed my daily chores, tucked myself in bed with some cashew nuts, crackers, my favorite drink; pineapple and coconut and had a film marathon till 6pm. I watched The Other Woman, Baggage Claim and Single Mom’s Club. Hmmmmmm @ the other woman, that guy was just unbelievable. Wow!!!  Anyway back to dinner, I decided to make something kid friendly as I understand many kids like my niece and her friends are not fans of fish in all its glory. This meal is easy and quick to make and you can involve the kids. You can serve this with boiled potatoes, fries or rice. I have used smoked cod but you can use fresh cod or salmon fillets.

Cook time: 10mins
Serves: 4



1 Green and red ball peppers, cut into large chunks
4 Smoked Cod fillets (180g each)
2 Tablespoons ginger and garlic paste
2 Tablespoons olive oil
Coarse black pepper and salt
3 Tablespoons lemon juice
2 lemon



Preheat the oven at 240 degrees or gas mark 6. Line the oven tray with foil and set aside. Cut the cod fillets into cubes.

In a bowl mix black pepper, salt, olive oil, lemon juice and ginger and garlic paste. Dip each fish cube and pepper chunk into the mix ensuring it is well coated before piercing through them with the bamboo skewer.

Place on the oven tray and put in the oven for 10 mins, 5mins on each side. Once cooked, slice the lemon in half and serve with the fish. This meal can be eaten either with boiled rice and vegetables or boiled potatoes and vegetables or you can eat it alone like myself :).
