Honey glazed salmon with noodles

I decided to walk back home from work today as part of my healthy lifestyle ;). It was tough due to the heat and my sandals defriending my feet making walking rather challenging 😦 but I made it home so really happy mission accomplished *happydance*.

On my way I stopped at my new favorite store *Morrisons* :). I think Morrisons need to ban me from their store for my sanity *coverseyes*. I bought some more fish including smoked cod loin and haddock fillet at bargain prices. I’m super excited and can’t wait to make meals with them over this weekend.

Cook time: 15mins
Serves: 4

Ingredients

Salt
Black pepper
8 tablespoons natural honey
4 salmon fillets (5 ounces each)
200g egg noodles
50g green peas
1 teaspoon ginger and garlic paste
2 tablespoons olive oil
1 sweet bite pepper, thinly sliced
70g kidney beans

Directions

Preheat grill at 220 degrees. Line baking tray with aluminum foil and place the salmon fillets. Season the fish with salt and pepper and spread honey across the surface of the fish. Put in grill for 10 mins.

Cook noodles in boiling water for 2 mins. Drain and keep warm. Add peas,  garlic and ginger paste and 1 tablespoon oil in mortar and mash with the pestle.

Add mashed paste to noodles and stir. Add the remaining oil, season with salt and pepper, add kidney beans and sweet bite pepper. Simmer for 2 mins and serve with salmon.

I absolutely love this meal it was quick and easy to make. The honey adds a sweet kick to the salmon, which was a great mix to eat with noodles.
